Saturday Chili's





I'm so glad Hubby is back, 
October felt like the longest month ever..
And I'm glad its over.
Don't get me wrong though. it was a fun month
I just didn't like the part that hubby was not home.

Anyways.. We decided to eat out yesterday, 
Its been a long long time we've been to Chili's
It's one of our favorite American restaurant.
They have the most fresh food ever.
Like literally fresh.
You just can tell.



We were so hungry so we had a big Appetizer.
We had an Appetizer that has 3 kinds in it.
Their Southwestern eggrolls are the best!!


Little man picked pizza, he''s favorite! (I mean who doesn't?)



Hubby had Fajitas, and I decided to try something different.
I love their burgers, It's literally one of the best I had but they got a lot of stuff on their menu that I should try.
I"m glad I did. 
Because this fresh mex bowl was so good!
I highly recommend it.

Chicken Adobo





I rarely cook Filipino food, because I want to learn and try dishes I never had.
But on days like this making an Authentic Filipino dish couldn't be more perfect.

Chicken Adobo is the simpliest authentic filipino dish, some people make this differently 
so today I want to share with you guys one of my favorite way to make it.

This can also be cooked with pork, But it gets to be a little greasy and I don't want that right now so 
I decided to make it with chicken.

Chicken Adobo
Ingredients:
  • 2 lbs chicken, cut into serving pieces
  • 4 tbsp. soy sauce
  • 1-2 potatoes, cut into cubes
  • 3 pieces dried bay leaves
  • 2 tbsp. vinegar
  • 3 cloves garlic,minced
  • 1 to 2 cups water
  • 1/4 cup cooking oil
  • 1/2 tbsp. white sugar
  • salt and whole peppercorn
  • 4 Hard boiled egg


Directions:
  • In a large container combine soy sauce and garlic then marinade the chicken for at least 1 to 3 hours
  • Place the cooking oil in a pan, put in the marinated chicken. cook all sides for 5 minutes.
  • Pour in the remaining marinade and add water. Bring to a boil
  • Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until chicken is tender.
  • Add the Potatoes and cook for another 10 minutes.
  • Add vinegar stir and cook for 5 minutes.
  • Put in sugar,salt and the hard boiled eggs, Stir and turn the heat off.
  • Serve with rice.

Homemade Chicken Alfredo Pizza



Hi everyone!
I'm so excited to share with you guys this pizza recipe that I made with 
my little helper.
This is actually my first time making this.

Every time we order pizza, If the restaurant have it I prefer pizza 
with white sauce.
Not all the time, But change is good sometimes.
The Alfredo sauce for this recipe is really good.
It's thick and creamy so it works great for the pizza.



One of the things I like about Homemade pizza is you pretty much 
can put anything you want, or anything you have in your fridge.
That sounds good right?
By the way, I have the best little helper ever. 
..And the cutest one.


I used a pre-made dough mix.
You can find it at any store now I think, All you have to do is mix it with water.
I tried homemade dough before but it wasn't successful so I definitely need to try it again one day.
So for this one, I just wanted to try Pre-made crust and it was good!

Homemade Chicken Alfredo Pizza
Ingredients:
  • 1 Pizza Dough (Pre-made mix) 
  • Alfredo Sauce (I used the ready ones in the jar) 
  • 1-2 Chicken breasts,boneless and skinless
  • 1 small red onion
  • 1 cup baby spinach
  • 6 oz Pizza blend shredded cheese
  • 1 Red bell pepper
  • 1 green bell pepper
  • 1 tbsp. olive oil
  • salt and pepper to taste
Directions:
  • Prepare the dough according to package instructions.
  • Preheat oven to 400 degrees.
  • Heat olive oil in a non stick skillet to a medium high heat. 
  • Sprinkle breasts generously with salt and pepper. Cook chicken in skillet until no longer pink in the middle about 8-10 minutes. Once cooked, allow to cool and then slice in to bite-size pieces. set aside for later.
  • Spread alfredo sauce over the pizza dough,  leaving about 1/2 inch around the outside edge for the crust.
  • Sprinkle sauce with some salt and pepper. Arrange onion slices,bell peppers and sliced chicken over the spinach. Top with cheese.


  • Place the pizza into the oven and bake for 8-10 minutes or until the crust edges are golden and the cheese is melted.
  • After taking the pizza out of the oven, allow it to cool for a few minutes. You can spread some melted butter on the crust if you want it to be buttery (that's what i did)
  • Slice pizza and serve

Trick or treat!



Happy Halloween!!
I hope you guys are having a fun, relaxing weekend.

Last night me and my little man went trick or treating with friends.
We usually go trick or treating with hubby 
But this year was different, way different.
Little man had more fun and I can say that he's more into it.
Maybe because there's kids with him. 
Or maybe because he's in that age where doing things like this is really fun.


I let him picked what he wants to be, Well I showed him his options.
..And he picked spiderman.
I love it!





 I didn't plan it but my friend told me she can paint my face too
since she planned on doing it on her face.
...And why not? feels like these couple of 
halloween party's we went to I look pretty much the same
a change is good. 


Can you believe she did that for like 15 minutes?
she's so good!





It was a gorgeous day, The weather here has been so 
confusing so cold when you wake up but at night you would want to 
turn on your AC back on.
Sometimes I don't know what to do anymore.



But, It was such a good day. 
It got cold a little bit when we got done. 
But the colors of trees. 
just so relaxing.



I'm such a proud mom the whole time were trick or treating.
This is the first year he is like this.
So energetic, he knows what to do and he really looks like hes enjoying it.

Really though, the little things like this makes me cry 
My son is such a big boy already..


We were walking for almost couple of hours and he never complained at all.



Anyways.. I'm so impressed with some of the halloween decorations we saw.
Freaky, creepy. 
So awesome!


This is the 3rd time I went trick or treating here in the U.S.
...and I can say its the best so far.
Looking forward for more awesome ones with my kids in the future.

..And yeah lots of candies! 
Now, I need a lot of power to stay away a little bit from these.

Weekend Things: 70's Disco Halloween Party





Hi everyone! How was your weekend?
I had a great time spending time with friends last weekend.
Remember when we went to a Masquerade ball last year? ( Here )
Last year was not planned at all, 
I'm so glad we went last year because I met these great people that I got to see again
last weekend.
Last year's theme was a Masquerade ball.
This year was 70's/80's Disco party.
So everyone was wearing a 70's or 80's outfit.
Sounds fun right?
Well. it was really fun!



This year is different because there was a band.
I wish hubby is home so he could come too.
Hopefully next year he will be home!


I had to refuel before we started dancing!
The meatballs and wings was so good.



I got my outfit a week online, One of the things I don't like 
about getting stuff online is that there's a big possibility that it won't fit.
I had to fix it, But I'm glad it worked.





Aside from having Filipino friends around,
The band were singing a lot of 80's music.
It definitely made me miss home. 
But it put a smile on my face, It didn't made me sad. 

I'm just happy that even though I'm thousand miles away from motherland.
I felt like I'm home even just for a night.


I'm looking forward for another halloween party with these great people.
Maybe next time I can get drunk again? 
I had to skip on that this year. haha!

Pininyahang Manok (Pineapple Chicken)




I love Sundays, It's usually the day of the week where I love
to have home cook meals.
Something fresh, and I usually prefer Asian food on Sundays,
But that depends... If we had American food on Saturday.

... And since I'm by myself I can cook whatever I want,
Put everything I want on the food I'm cooking.
That's probably only the good thing about being alone.

This dish is one of my favorite Filipino dish, I learned this from my mama.
If you guys haven't noticed I love anything with coconut or anything creamy 
over my rice. ( You can definitely tell I'm asian huh?) 

Anyways.. This dish is good even without rice!
I haven't tried to make this for hubby.
He said it looks good.
Maybe one of these days, I will.
I'll let you know what he thinks!


Pininyahang Manok (Pineapple Chicken)

Ingredients:
  • 1 1/2 lbs. chicken cut into pieces (Bone in chicken is much better)
  • 1 14 oz. can pineapple, chunks
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1 cup coconut milk
  • 1 1/2 tbsp fish sauce
  • 2 small carrots, sliced diagonally
  • 1 small onion, diced
  • 1 tsp. garlic, minced
  • 1/4 tsp. black pepper
  • 3 tbsp. cooking oil

Directions:
  • Marinate chicken in the pineapple juice from the canned pineapple chunks for 30 minutes to 2 hours.
  • Heat the cooking oil in a pan.
  • Saute onion, and garlic.
  • Add the chicken pieces one by one. Cook until the color turns light brown. Flip the chicken to cook the other side.
  • Pour the pineapple juice marinade in the pan. let it boil
  • Add the coconut milk. Stir and cover, and simmer for 30-40 minutes. until the chicken is tender.
  • Add the fish sauce, season with salt and pepper. Add the pineapple chunks and cook for 5 minutes.
  • Add the carrots and bell peppers. Cook for 5 -10 minutes.
  • Serve over rice. Enjoy!

Halloween Party



Had a great time at a Halloween party last Saturday.
The second time I'm dressing up for halloween, 
You can call it the first time since last year was a themed Halloween party.

I decided to dress up as a Roman Goddess.
I thought about trying to look different, But I just can't decide what.

So i just went with this.
..And I loved it.



Before going to the party I made this Halloween themed dessert.
Everybody brought a dish/dessert for the Food contest
I know this is not too special to win, But I'm glad that at least they liked it.


Everybody's dish are so awesome, this is one them that caught my eye.
what do you think??


My eyes are always bigger than my stomach, But I had a lot of deviled eggs. 
So good!

 The party was for wives, It was so nice to meet new people.




There's also a table where you can make halloween crafts which I loved the most.
..But, I'm obviously not crafty..
But I'm still proud of what I made! haha!


I think little man had a great night too!
