Chicken Broccoli Pasta Salad

 


I'm 80% sure that I just made Hubby's favorite Pasta salad. 
He loves snacking right when he gets home so something cold and ready to eat 
is what he loves. 
Made this and he said it's the best Pasta Salad I made so far.
..And I agree!






The balance of flavors, crunch and the fresh ingredients on this Pasta Salad is what makes it good. 

Feel free to use any Pasta.
Just not the big ones!
I made the Chicken on the Air fryer for 30 mins. 
Just put any seasoning of your choice.

Ingredients

  • 1 pound (4 cups) dried Radiatore pasta
  • 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
  • 3 cups small broccoli florets
  • 1/2 cup golden raisins
  • 1/2 cup diced celery 
  • 3/4 cup sliced almonds
  • 4 scallions, diced

For The Dressing

  • 1 cup mayonnaise
  • 3/4 cup sour cream (or plain Greek yogurt)
  • 2 tablespoons honey
  • 3 teaspoons Dijon mustard
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon pepper

Instructions

  • Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water. Drizzle with a little olive oil to prevent sticking. 
  • In an extra large bowl, whisk together all the ingredients for the dressing until combined and smooth. Add in the cooked pasta, chicken, broccoli, raisins, celery, almonds, and scallions; toss to combine and coat. 
  • Enjoy right away or refrigerate until ready to serve.

Zydecos (Southern Soul & Cajun Cuisine)

 

After the Baseball game last weekend 
We went to Zydecos for Dinner.
I heard a lot of good things about it so I was so excited to try.

It was also my first time trying Cajun Cuisine!



Have you tried Alligator???
It sounds crazy, of course hubby wanted to try it. 

It was actually really interesting.



They have really good selections on their Menu.
So many things we want to try next time!
This time... We decided we are going to try something new!



Alligator Cheers!




For Main Dish I picked Etouffee.
It sounded so good so I had to order it, and you can get it really spicy.
I went with medium.

It was so good, the flavors was on point!!





Hubby had Jambalaya.
It was also so good!
Their servings is pretty good too.
I only tried a little bit since hubby ordered the spiciest one.




..And since we feel really adventurous we also ordered Frog legs.
I wasn't really sure about this.
I tried a little bit.
It taste a little bit like Chicken. 

Over all...
It was a great dinner. 
I'm so glad we picked Zydecos.
I highly recommend if you are in Warrensburg.

Players Restaurant (Warrensburg)



Cooking at home is always the best.
But, sometimes going out to eat is nice.
A little break from cooking and cleaning.



We decided to try Players Restaurant (Warrensburg)
There is so many restaurants I want to try around town, this one we 
always drive by it so we decided to try it now.

Started off with some Beers and omg Calamari.
I can't believe they have it so I had to order it.




It was okay, not the best one I had.
But, I would eat it again for sure!



They have really good selection of Sandwiches and other stuff.


Hubby had a Gyro.
..And I had their Players Prime Rib Sandwich.


It was so good!
Service was also good.



We highly recommend!

Would be nice to have more!



It was a Beautiful Spring-like weather last weekend.
I can't believe that this coming week will be a different story.

With Missouri being unpredictable its good to enjoy a Beautiful weather 
like this when you can.
We grilled some food, Hangout and it was so relaxing!



Hubby made some Bacon wrapped Burgers with Pineapple.
..And it was oh. so good!






I had to cook inside so I joined them as much as I could.


I love Spring.
I can't wait for more of this.


The ( Air Fryer French Fries ) that I made was so perfect for this Burger!




One of the Best Dinner yet.
Always leave room for dessert!

Central Missouri Baseball

 

Spring is almost here!
That means Baseball season is here!
I don't know if you guys know it..
But my husband loves Baseball, I mean he loves any Sports but 
I think he loves Baseball the most.

We went to a Road trip watching a lot of Baseball games a while back and
that was amazing.
I wish we can do it again someday.
But, for now we will just enjoy what we can watch.



We went to watch Mules play for the first time.
We heard they are a good team.
..And they are!

They did amazing last weekend.



I'm so happy Spring is here.
We can do more outdoor things like this again.












Such a perfect day.
I can't believe next week will be windy and Rainy!




It was a fun day.

Air Fryer French Fries

 

Ever since we got our Air Fryer I have never made Fries in the oven.

I love crispy fries and cooking it in the Air fryer is the best. 

We had so many Potatoes so we decided to make Homemade French Fries!

I can't believe how easy it is to make!




Ingredients

  • 1 pound potatoes I used Yukon Gold, Russet work great for a higher starch version
  • 2 teaspoons oil avocado oil, melted coconut or olive oil all work
  • 1/2 teaspoon ground paprika
  • salt and pepper to taste



Don't skip the soaking part of the Potatoes, I think its a key steps for
making the Fries Crispy.



Instructions

  • Peel potatoes and slice into 1/4 - 1/2 inch thick fries. Place in large bowl and cover with water. Soak for 30 minutes.
  • Drain and rinse potatoes, then pat very dry with paper towels. Place potatoes in large bowl and add just enough oil to coat them all (may not need all of the oil, add gradually). Sprinkle with ground paprika and toss to evenly coat.
  • Preheat air fryer to 350 F for 5 minutes. Then, place a single layer of potatoes into the air fryer basket. Cook for 10 minutes, then remove basket to shake. Cook for 5 more minutes, then check on potatoes. Add 2-5 more minutes to the cooking time, depending on how done the potatoes already are and how crisped up you want them.
  • Once potatoes are done, imemdiately remove to a bowl and toss with a sprinkling of salt. Serve immediately! Cook remaining potatoes in batches in the same way.

    It came out really good!

Turkey Bacon Ranch Sliders

 





My Mother in-law came this past weekend with his Sister. 
I wanted to make a Filipino dish, its too bad I'm almost out of Stock with my Asian 
Ingredients.
Time for an Asian store trip this month!

So Hubby picked what I made. 
While he was explaining me this, in my head..
That sounds weird.
But using the Ranch as mayonnaise was actually a great idea.
We made so many Sliders before and this was one of the best. 

Leftover Turkey is also good, we just use the pre packaged turkey at the grocery store and it
was so good.
You can also use Bacon bits.. or cook bacon before making this just like what I did.

Whatever you prefer.

Ingredients


  • 12 sweet Hawaiian rolls
  • 1/4 cup ranch dressing
  • 3/4 pound sliced or shredded turkey
  • 6 slices white cheddar cheese
  • 2 - 3 ounces bacon bits
  • 5 tablespoons butter melted
  • 1/4 cup brown sugar
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard optional
  • 2 teaspoons Worcestershire sauce

Instructions


  • Preheat oven to 350°F. Line a 9x13 baking pan with foil.
  • Use a bread knife of a long serrated knife to slice slider rolls in half. Remove the top half and set aside. Place bottom half in lined baking dish.
  • Spread ranch dressing on the bottom half of the rolls.
  • Layer turkey on rolls, then layer cheese on top. Set the bottom half of the rolls covered in meat and cheese in the oven to warm up while mixing up the sweet slider glaze.

Sweet Slider Glaze


  • Melt butter and stir in brown sugar, poppy seeds, mustard and Worcestershire sauce.
  • Remove bottom half of sliders from the oven. Sprinkle bacon bits on top of the cheese. Place top half of sliders on the sandwiches.
  • Pour sweet glaze mixture evenly over top of sliders and bake for 10 - 15 minutes until sandwiches begin to brown.






I also made my Favorite Crockpot meatballs.
These Recipes are the perfect meals to make on busy day!

Coffee Bar



Mornings are just about to get better..

Now that our Coffee bar is complete.
I have been patiently waiting for our new espresso/cappuccino maker.
I'm so happy it finally came!




If you know me, Coffee is my favorite part of my mornings.
I mean.. It's the best time of the day!




I loved collecting these coffee mugs.
..And when I collect mugs, I do use it!






Most of these came from Amazon.
Espresso/Cappuccino maker was ordered from Amazon.
I will link it if you guys are interested.



I'm so glad I still got at least one of these so I can Imagine I'm still in Italy.






It is amazing!

I'm so happy I can make this whenever I want.
