Chicken & Sausage Spinach Pasta

I have been craving for a pasta so much,
We decided that what would be for this weekend.

Started off with some Spritz,
My absolute favorite all the seasons.

So refreshing.
Just reminds me of Italy so much!

Also made Salad for Side.
Made this before and it's so good every time

The pasta was absolutely amazing.

This Cheesy Garlic Bread was phenomenal with this Pasta

Ingredients

  • 2 tablespoons vegetable oil
  • 1 boneless skinless chicken breast, large in size
  • 1 teaspoon Italian seasoning a combo of thyme, oregano, & basil
  • Salt/Pepper to taste
  • Smoked Sausage, sliced
  • 3/4 lb. penne pasta

Alfredo

  • 2 teaspoons garlic minced
  • 2 Tablespoons all-purpose flour
  • 2 cups half and half
  • 1 + 1/3 cups Parmesan cheese shredded
  • 1 teaspoon red pepper flakes optional
  • 1 cup cherry tomatoes halved
  • 2 cups spinach uncooked

Instructions

  • Shred the Parmesan cheese and set it aside to allow it to get to room temperature.
  • In a large cast-iron skillet, heat 2 tablespoons of vegetable oil on medium-high heat.
  • Butterfly the chicken breast and cut the seam to create 2 thinner slices, each about an inch thick. Season each side generously with Italian seasoning and desired amounts of salt and pepper.
  • Sear the chicken in the hot skillet on each side. Refrain from moving the chicken around as it sizzles, it will hinder the nice golden sear color. If the pan gets too hot, reduce the heat to medium. Each side will take 3-5 minutes. Once each side is a nice, golden brown and the middle is cooked, set the chicken aside.
  • Reduce the heat to medium low and add the sausage to the same skillet. Low and slow is the best way to cook bacon.
  • While the sausage cooks, prepare the pasta according to package instructions. Drain and set aside.
  • Once the sausage is cooked , use tongs to remove it from the pan. Grease the pan, and add the garlic. Cook for about 60 seconds.
  • Increase the heat to medium and gradually add in the flour, whisking constantly.
  • Temper the half and half by heating it in the microwave for 30 seconds. Add the half and half to the skillet and increase the heat to medium-high, stirring constantly. Once it starts to lightly bubble, decrease the heat to low.
  • Slowly sprinkle in the Parmesan cheese, stirring as you do so.
  • Once well-combined, add the tomatoes, spinach, and red pepper flakes. Cook for a few minutes until the tomatoes have softened slightly. Use a silicone spatula to gently mix in the penne.
  • Slice the chicken into strips and place it back in the pan, over the pasta. Add the sausage, and serve!

Perfection!

Let me know what you guys think!

Cheesy Garlic Bread

If there's any bread that I can say that I'm obsessed with is Cheesy Garlic Bread

The store brought ones is so good.

But, I just found out myself that the Homemade ones is 100 times better!

It is actually not hard to make.

I swear this is the best!

Aromatic Garlic Confit

The key to cheesy garlic bread is the garlic confit. Oven-roasted with herbs for a delectable fragrance, the only way you’ll make garlic cheese bread from now on. Easy to make, it just needs a little patience as it simmers away in olive oil. You can infuse your olive oil with rosemary, black peppercorns, bay leaves, lemon zest or flakey sea salt for a tantalising taste or keep it simple with some sprigs of thyme. Once the garlic turns golden brown and is soft to the touch, it will lend a caramelised flavour and buttery, velvety texture that will melt in your mouth. This garlic confit will upgrade your cheese and garlic bread and is a delicacy you’ll constantly crave.

Bake 2 cloves of Garlic in Olive oil and herbs

375 F until soft.

I would say its about 15-20 minutes.

Ingredients

  • 1 loaf French or Italian bread (approx. 24" long)
  • Garlic confit
  • 2 Tbsp olive oil
  • 4 cloves garlic, minced
  • 2 Tbsp chopped fresh parsley
  • 1/8 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 cup Butter, room temperature

Instructions

  • Preheat the oven to 400ºF. In a bowl, stir together the room-temperature butter, olive oil, garlic confit, garlic powder, chopped parsley, and salt until relatively smooth (a few small lumps of butter are okay).
  • Cut the loaf in half, into two 12" long pieces, then cut each piece open lengthwise. Lay the bread on a baking sheet cut sides facing up. Spread the garlic butter mixture evenly over the open surfaces of the bread.*
  • Bake the bread for 10-15 minutes, or until the edges are golden brown and crispy. Bake for less time if you prefer a softer garlic bread, and more time if you prefer a crispier garlic bread. Cut the bread into 2-inch sections and serve hot.

Perfection!!

Enjoy!

The Best French Toast

We eat Pancakes most of the time,
When I want a change French toast is my go to.
Using Brioche bread was a game changer too.
I highly recommend!!!

Let me know what you guys think!

Ingredients

  • 4 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon, divided
  • Pinch of salt
  • 8 slices Brioche bread
  • Unsalted butter, for cooking
  • Maple syrup, powdered sugar, and berries for serving, if desired

Instructions

  • If using an electric griddle, preheat the griddle to 350 degrees F.
  • In a shallow pan or pie plate, add the eggs, milk, vanilla, half of the cinnamon, and salt. Whisk until well combined.
  • Dip each side of the bread in the egg mixture. Note-add the other half of the cinnamon after you have dipped half of your bread slices and mix again. This will make sure all of the slices get a good amount of cinnamon.
  • Melt a little butter on the hot griddle or in a large skillet over medium heat. Cook the French toast until golden brown, about 2-3 minutes on each side.
  • Serve the French toast warm with maple syrup, powdered sugar, and berries, if desired.
  • Note-to keep the French toast warm, heat the oven to 200 degrees F. Place a wire rack on a large baking sheet and place the French toast on the rack. Keep warm in the oven for up to 30 minutes. Garnish with Berries and powdered sugar.

Enjoy!

Smashburger Tacos

We have been seeing this all over the internet,
It definitely looked so good.
We have finally made it.
I would say it is definitely good!

..And it's not really hard to make.
We were worried that the meat would not cook.
But it was perfect!

INGREDIENTS

Smash Burger Tacos

  • 1 lb ground beef
  • 8 tortillas, flour
  • 8 slices of cheese
  • Salt
  • Black pepper

Big Mac Special Sauce

  • 1/4 cup mayo
  • 2 tbsp ketchup
  • 1 tbsp dill pickle juice
  • 1/2 tbsp yellow mustard
  • 1/2 tbsp sweet pickle relish
  • Salt, to taste
  • Black pepper, to taste

Toppings

  • Iceberg lettuce, shredded
  • Tomato, chopped
  • Dill pickles

INSTRUCTIONS

  1. First prepare the special sauce.  In a small bowl combine the mayo, ketchup, pickle juice, yellow mustard, and relish. Add salt and black pepper to taste. Optional: You can also add garlic powder and onion powder. Set aside.
  2. Next divide the ground beef into 8 equal portions.  They should be 2 oz each.  Gently press one portion of the raw beef into each of the tortillas with your fingers.  It should be completely flattened, or smashed into the tortilla.  Season with salt and black pepper.
  3. Next heat up a large skillet or griddle, over medium-high heat.  Add the tacos, ground beef side down, to the hot surface. The number of tacos you can cook at once will depend on the size of your pan / griddle.  Press down on the tortilla side with another pan or skillet, burger press, or any heavy object and cook for about 2-3 minutes.
  4. Next flip the taco burgers and place a slice of cheese on top of the beef patty.  Continue cooking for another 1-2 minutes to let the cheese melt. Remove from the heat.
  5. Add the burger sauce, shredded lettuce, tomatoes, and dill pickle slices to the tacos.
  6. Serve and enjoy!

with this awesome meal and and it was perfect!
