Filipino-style Spaghetti



 
For our Sunday dinner, I decided to make something special, I was in the mood for cooking and I didn't need to cook a lot for meal prep, since hubby is not going to need a lot of food this week.
 
So after meal prepping for the week. I cooked Filipino style spaghetti, One of hubby's Favorite Filipino dish. I really love this too, I will never get tired of it. I can eat it everyday if I can! haha
 
This is usually serve at almost all occasions In the Philippines. Birthday, Fiesta, Holidays.
It's a must try. You are going to love it!
 


Ingredients:
  • 2 lb. Spaghetti
  • 1 tbsp. Vegetable oil
  • 2 cloves Garlic, minced
  • 1 small Onion, chopped
  • 1 lb. Ground pork
  • 1 lb. Hotdogs, sliced diagonally
  • 1/2 cup Water
  • 1 (14 ounce) Banana ketchup
  • 2 Cups Spaghetti sauce
  • 1/2 Cup tomato paste
  • salt and pepper to taste
  • 1/2 cup shredded cheese

Directions:
  • In a pot, Cook spaghetti in a boiling water according to package direction for about 7-9 minutes. Drain well.
  • In a sauce pan, Heat oil. Add sliced hotdogs and cook, stirring occasionally, for about 1-2 minutes or until lightly browned. Remove from pan and set aside.
  • Add onions and garlic and cook. Add ground beef and cook, stirring occasionally and breaking into small pieces, for about 7-10 minutes until browned. Drain any excess fat.
  • Add spaghetti sauce, tomato paste and ketchup. Bring to a boil then lower to heat to simmer. Cover for about 30 minutes or until meal is fully cooked and sauce is thickened. If sauce is getting too thick, add water. During the last 10 minutes of cooking, add hotdogs. Season with salt and pepper to taste.
  • To serve, Spoon spaghetti sauce over noodles and top with cheese.

Baked Buffalo Chicken Wrap



 
My husband is absolutely obsessed with buffalo sauce, I can make any dish that has buffalo flavor and he will love it.  
I didn't have any Panko bread crumbs when I first made this so I decided to use Corn flakes, and I'm really surprised how good it turned out, It was really crispy. You should give it a try.

Ingredients:
  • 1/4 Cup flour
  • 1 egg, whisked
  • 3/4 Cup crushed corn flakes (or Panko bread crumbs)
  • 2 Chicken breast, Sliced into chicken tenders
  • Spinach or Romaine lettuce
  • 2 Large Flour tortilla
  • Sliced cheese
  • 1/2 Cup buffalo sauce
  • 2 tbsp. Ranch or Blue cheese dressing
 
 
 
Directions:
  • Preheat oven to 400. Meanwhile, begin by lining up flour, egg and crushed corn flakes. Starting with the flour, dredge the chicken tenders. Make sure to get the excess flour off. Next, dip the chicken in the egg and drain excess as well. Finally roll the chicken in the crushed corn flakes or bread crumbs until fully coated.
  • Place chicken tenders on a baking sheet and cook until golden brown about 15 minutes. Make sure to flip chicken tenders halfway through.
  • In a medium bowl, add buffalo sauce and chicken tenders, toss with a pair of tongs until fully coated.
  • Place tortillas in a medium skillet to warm, I usually do a minute each side, Place tortilla on flat surface and topped with spinach, cheese 1/2 of the chicken and ranch dressing. Roll up carefully. Cut in half and enjoy!

Cold Spring Day.





 It was such a beautiful day Saturday even though It was a little chilly, I thought we would be able to go to park but we changed our mind.
 
So we just decided to go for a ride get our craving fix, watch Netflix and relax!
 
It was a good day.
 


I love how these trees look in spring they are so beautiful!
 



 
We were craving for Fried chicken so we decided to just get some from KFC, I like It better than Popeyes.
 
 
 
Finally got to try their chocolate cake too, It was the moist cake I've ever had for a while, I promise it was really good!
 

I have been wanting to try these too, The taste didn't seem new to me though.
I been having Mike's hard lemonade a lot and it taste pretty much the same. But this was really good though.

Soft Baked Cinnamon Roll Pretzels



 
I love pretzels so much, especially when they are soft and buttery. I tried to make pretzel before and they just turned out really hard. I can't figure out what I did wrong, but it made me have second thoughts of trying again. But when I saw these I just can't help it, They looked so good, so I decided to give it a try and I'm glad I did they are so perfect, I highly recommend.
 
 
 
 
Ingredients: ( Inspired by Lil' Luna  )
  • 2 Cups All purpose flour
  • 2 tbsp. Sugar
  • 3/4 Cup warm water
  • 1 tsp. Dry active yeast
  • 1/4 tsp. Salt
  • 1/2 tsp. Ground cinnamon
  • 1/2 tsp. Vanilla extract
  • 1 Egg, lightly beaten
 
Cinnamon sugar:
  • 1 tbsp.  Melted butter
  • 2 tbsp. Sugar
  • 2 tsp. Ground cinnamon
 
Glaze:
  • 1 Cup powdered sugar
  • 1 tbsp. Melted butter
  • 2-3 tbsp. Milk
  • 1/4 tsp. Vanilla extract
 
 
Directions:
  • Preheat oven to 425, line one baking sheet with parchment paper and set aside
  • In the bowl of a stand mixer fitted with the paddle attachment, add warm water.
  • Sprinkle yeast and allow to dissolve for 2-3 minutes. Add sugar and vanilla. mix for 15 seconds. With mixing speed on low add salt and cinnamon, then flour a half a cup at a time. When all of the flour is gone, switch to the dough hook attachment (or place dough onto a lightly floured surface and knead for 4 minutes) or until the dough is smooth and elastic.
  • Divide dough into 6 equal size pieces. Roll each ball into a long rope, about 18-22 inches length. Take the ends of the rope and bring together to form a circle. Twist the ends together once and bring down to the bottom of the circle. Press ends into the dough so that they will stick. Place onto prepared baking sheets.


 
  • Using a pastry brush, Coat each pretzel with egg wash, Place baking sheet into oven and bake for 12-15 minutes, turning halfway through for even baking. Remove from oven and allow to cool for 2-3 minutes before sprinkling cinnamon sugar on top.
  • To make the glaze, combine all ingredients in a small bowl and whisk until combined. Add more milk to reach the desired consistency. Drizzle over top with a spoon or pastry bag fitted with a small circular tip.

Creamy Shrimp and Mushroom Pasta

 
 
 
 
Made this awesome dish last Sunday. I have been on a mission on learning new recipe that my hubby will like. We've been doing meal prep for a while and he likes it when I change It up sometimes.
 
This is a not so healthy dish but it's a really good weeknight meal if you want something easy, creamy and so delicious.
 
My craving for creamy pasta is satisfied after having this. This is actually my first time making this.

Ingredients:
  • 1 lb. Raw shrimp
  • 1 Stick Butter
  • 1-2 tsp. minced garlic
  • 4 ounces cream cheese
  • 5-6 oz. spaghetti or any other noodles you prefer
  • 1-2 tbsp. parsley
  • 1 tsp. seasoned salt
  • salt and pepper to taste
  • 1-2 tbsp. lemon juice
  • 8 ounces fresh mushrooms  
  • 1/2 pasta water
  • Parmesan cheese for topping
 
Directions:
  • Cook pasta according to directions.
  • Make sure you've thawed your shrimp if its frozen, and dry them really well. I just let mine sit on a paper towel-lined plate, topped with more paper towels.
  • Sprinkle shrimp with seasoned salt and little salt and pepper.
  • In a large skillet melt butter over medium high heat and cook shrimp until pink. add  mushrooms and saute until soft and brown. Season with salt and pepper.
  •  Add minced garlic, cream cheese. At this point the cream cheese will look scary and lumpy. Don't worry it will smooth out later with when we add the water.
  • Simmer the mixture until well blended. Get a scoop of boiling pasta water from your noodle pot and mix it in, stirring quickly to smooth out the sauce.
  • Toss sauce with cooked noodles.
  • Sprinkle parmesan cheese on to and serve.

Perfect Grilling Weather



 
It was such a beautiful day Saturday, Even though we didn't plan on going anywhere else since our plans changed the last minute, We didn't want to waste the beautiful weather. So we decided to grill out.
This was so good, The marinade for the steak is simple as it gets and I bet most of you have all of these already in your pantry.
 
We served this with rice, Which is perfect for me, But I could seriously just make a meal of these alone.
 
 
Grilled Marinated Steak Kebabs
 
Ingredients:
  • 1/2 Cup vegetable oil
  • 1/2 Cup soy sauce
  • 2 Tbsp. Apple cider vinegar
  • 1 Clove garlic, minced
  • 1/2 Tsp. pepper
  • 1/2 Tsp. dry mustard
  • 2 Tbsp. honey
  • 2 lbs. Sirloin steak, cut in cubes
  • 1 Large Red, Orange and Green Bell peppers cut into chunks
  • 1 Large onion
  • Metal skewers or wooden skewers that have been soaked in water for 30 minutes


Directions:
  • In a large bowl, combine all ingredients except the meat and vegetable chunks
  • Place meat in a shallow dish, Pour sauce over meat to coat. Cover dish and marinate in the refrigerator for at least 30 minutes or overnight.
  • Preheat grill
  • Place meat on skewers, alternating with chunks of bell peppers and onions. Brush kebobs with remaining marinade.
  • Grill kebobs with lid, over direct heat for 10-15 minutes per side until desired doneness is reached.
Enjoy! 


 
We also decided to grill some Pineapples. This is so perfect as a side or dessert.
It reminds us those grilled pineapple that they serve at a Brazillian Steakhouse.
 If you've been to a Brazillian Steakhouse you know how good those pineapples are!

 
Anyway, Don't think about using Canned pineapple with this one.
 

Even though cutting it up is a little hard when you don't do it often. haha!
 

 

Grilled Pineapple
with Cinnamon Honey Drizzle
Ingredients:
  • 1/2 Cup Honey
  • 1 Tsp. Cinnamon
  • 1 Fresh Pineapple
 
Directions:
  • Mix together honey and cinnamon (softened in the microwave for 30 seconds)
  • Place pineapple slices in the glaze and let marinate for at least 30 minutes.
  • Preheat grill to medium heat
  • Place the pineapple slices on the grill for 2 minutes (you can drizzle the rest of the glaze on top while grilling)
  • Serve on its own or over ice cream.

Myrtle Beach, South Carolina.

 
It's Officially Spring even though mother nature can't make up her mind yet, I'm so happy that warm weather is coming. I'm looking forward for flowers, sunshine and lots of outdoor fun.
 
 
 
 
Since I started my Blog late last year, I decided I'm going to start posting some of my favorite places/occasions from this past few years. I love pictures so much so I always have tons of it.
 
 

 
 
Spring last year we decided to spend a weekend at Myrtle Beach, South Carolina It was a great time.


 
We were suppose to go there for my birthday but since the weather can't cooperate and make me happy...haha We decided to move it. It wasn't the perfect weather for the beach, But I'm so glad we went. Everything turned out perfect that day.




 
We decided to stay at Ocean Reef Resort and I thought it was the perfect place to stay.
We literally can just stay there at our room and have some drinks at balcony and watch the sunset.

 
After we drop all of our stuff, We decided to go to Ripley's Aquarium.
I like going to Aquariums every time I go to the beach, There's something about seeing fishes and shark that makes me happy. And so little man can have fun too! :)

After going to the Aquarium we went for a walk around the Broadway which was so nice, There's so many things to do. There's a lot of shops, restaurants and museums are just walking distance.

 
This was one of the reasons why I really want to go to Myrtle Beach, Because I really want to see this museum. Going inside was not important for me, I just want to have a picture in front of it. haha!

For dinner, We decided to try Captain George's Seafood.
It's a Buffet Restaurant, I thought it's a little expensive but with the quality of their food it's worth it. I would go back there again.
 
 
 
On our last day, We decided to spend the rest of our time at the resort.
If we didn't have anything else planned I could just stay there the whole time we were there, The resort was so nice.
 

 
Sunrise, I wish I woke up a little more early.
But this was such a beautiful thing to see. I wish I could see this more often.

 
It was a little chilly but we still spent a little time at the pool
this kiddie pool was so cute, It was too cold for little man to swim though.


 
Their indoor pools was so nice too, It wasn't that cold.
 





 
It was such a beautiful day.

 


 

 
Before leaving we went for a quick walk at the beach, It was a little warm that time.


 











 
It was a really good weekend. We don't have any plans yet for this year.
But I know we are going to beach at least once this year.
