Paksiw

 


I still very much crave Filipino food a lot of times.
I am just so grateful that there is an amazing grocery store 
where I can get all of the ingredients I need.

Today's craving is paksiw.
It's sour but it shouldn't be too overwhelmingly sour.
So savory and perfect with Rice.






INGREDIENTS 


  • 1 lb whole fish, scaled, gutted, and cleaned

  • 1-1/2 cups vinegar, cane or rice vinegar
  • 1/2-inch knob of ginger, peeled and thinly sliced
  • 1 teaspoon salt, more to taste
  • 1 to 2 Thai chilies, optional
  • Eggplant cut diagonally




INSTRUCTIONS

Lay the fish on the top of the Eggplant in a pot big enough to hold everything together. Add vinegar enough to cover the fish. Add ginger, salt, and chilies. Bring to a boil and simmer over low heat until fish is cooked, about 10 minutes. Add salt to taste. Serve with rice and Enjoy!











It was perfect.

It gives me comfort that I can make this whenever I want. 

This Air fried Lechon is so good
Hubby loves it too.




Perfect in a bowl of Rice or by itself.

Airfried Steak

 


I love having a go to easy meals.
Air fryer is perfect for that.

While I roasts these veggies in the oven.
I Air fried marinated steaks in the air fryer.






These Beauty is baked in the oven for 15-20 minutes at 375 F

Drizzle with olive oil, seasoned with your favorite seasoning.



This steaks can be marinated with your favorite marinade or you don't need to.

Cooked in the Airfryer for 15 minutes.

Rice Paper Wrapped Ramen Noodles

 

I recently started an obsession anything wrapped with Rice paper.

Its just so light and so fresh,

Its so fun to think about a main food to put in it and add

some yummy veggies in it.





This is absolutely not a specific recipe kind.
But pick your favorite ramen.
Cook it as it as how ever you want it.

Wrap with cut veggies like carrots, cabbage, cucumber.

Rice paper wraps doesn't really last long so I suggest to serve and eat as soon as possible.

I like having some of it ready then roll when I'm ready to eat it.

French Dip Crescents

 

I love easy meals 
..And this is definitely one of it.

Perfect weekday dinner or finger food. 

The boys loved this!!!





Ingredients

  • 1/2 pound deli roast beef thinly sliced
  • 4 pieces Mozzarella string cheese cut in half
  • 1 can (8 ounces) refrigerated crescent rolls
  • 1 packet (1 ounce) Au Jus mix



Instructions

  • Preheat oven to 375 degrees F.
  • Separate crescent rolls into 8 triangles. Top each crescent with 2 slices of roast beef and one half piece of string cheese.
  • Roll up and place on baking sheet. Bake for 16 to 18 minutes, or until golden-brown.
  • While crescents are baking, make Au Jus mix according to package directions. Serve with warm french dip crescents.

Homemade talian Dinner


Birthday weekend continues at home.
Homemade dinner made by hubby. 

Having a Birthday during the week kind of sucks
Because I can't celebrate with my boys 
So it has to continue on the weekend.





Started off with amazing Limoncello Spritz.




For Appetizer is this amazing 
Melon Mozzarella Prosciutto Salad
Isn't it too pretty to eat?!!?


So easy to make 
You just need a Melon Baller, drizzled with Olive oil!

I swear this combo is just perfection!






We had Shrimp Rolls for Appetizer and a Side of Caesar Salad.

So good!




Hubby made my favorite Seafood Pasta.
I seem to be eating this every year for my Birthday.
We go to Italian Restaurant for the past few years,
This year though I wanted to change it up.
..And I know that my hubby makes a bomb version of it.
SO much better!!!






What an amazing Dinner.

Limoncello Spritz

 


Aperol Spritz is like my go-to summer drink
I even drink it during winter.
It's just so refreshing.

For a change I tried Limoncello spritz. 
Now that it's warmer, It's the perfect time to try it.

If you love Sparkly drinks like and of course of you like Aperol 
you will love this too.

Limoncello is not really sour and if you mix it 
It's just perfection.

Ingredients

  • 2 oz limoncello
  • 3 oz prosecco
  • 1 oz club soda
  • 1 cup ice
  • sprig mint (optional - for garnish)
  • 3 slices lemon (optional - for garnish)

Instructions

  • Add ice to a glass of your choice.
  • Add the limoncello, followed by the prosecco and club soda.
  • Stir the ingredients.
  • Add garnishes of mint and lemon, if desired.
  • Serve immediately.

Colton's Steakhouse (Sedalia MO)

 

My Birthday this year has been fun and relaxing.
Spending it my loves is all I just needed.




We decided to go somewhere closer.
We got to KC every year, but this year.
We decided to go to Sedalia.
Which is only 30 minutes away.

I wanted to go to a Steakhouse and this is the only Steakhouse that is
open for lunch!
Can you believe that?

Anways, We love Colton's Steak house so no complains about that.






We got there just at Lunch time so some Cocktail would be a good idea.
They had special drinks on the menu.
...And this Watermelon Spritz caught my eye.

IT was good!!






Started off with some Peanuts and Blooming onions for Starters.
I love how big the portion is!!!













Who else bring their favorite hot sauce everywhere????!!
Is it just me????





Anyways, 
These rolls was amazing!!
So fresh!






Hubby had Philly Cheesesteak Slider
And I had their Steak combo with Shrimp.

I tell ya.
This was fire!!




Defnitely a Birthday meal!!!




Everything was perfection.


She even gave us a free Ice cream since we mentioned it was my Birthday.

But seriously,
The food, service, ambiance 
over all

10/10
I highly recommend!

Chicken Sotanghon

 

Chicken Sotanghon is one of my favorite filipino soup.
So so comforting.
So easy to make!!









Ingredients

  • 1 1/2 lbs. chicken breast
  • 1 piece Knorr Chicken Cube
  • 2 1/2 ounces sotanghon noodles
  • 7 cups water
  • 1 piece dried bay leaves
  • 1 1/2 cups cabbage shredded
  • 1 piece carrot julienne
  • 1/2 cup scallions chopped
  • 2 stalks celery chopped
  • 1 piece onion chopped
  • 5 cloves garlic minced
  • 2 tablespoons garlic roasted
  • Fish sauce and ground black pepper to taste
  • 3/4 cups annatto water
  • 3 tablespoons cooking oil

Instructions

  • Cook  the chicken by boiling water in a cooking pot. Add bay leaf. Put the chicken breast in the pot. Cover and boil in medium heat for 20 minutes. Remove chicken from the pot and put in a plate. Set aside and Let it cool down. Save the chicken stock. Chop or shred the chicken and set aside. 
  • Heat oil in a large pot. Saute garlic until light brown. Add onion and celery. Saute until onion softens. 
  • Put the shredded chicken in the pot and then saute for 2 minutes.
  • Pour chicken stock and let boil.
  • Add Knorr Chicken Cube. Stir.
  • Add annatto water and sotanghon noodles. Cover and cook for 10 minutes.
  • Put carrots and cabbage into the pot. Cook for 5 minutes.
  • Season with fish sauce and ground black pepper.
  • Put some roasted garlic and chopped scallions. Stir.
  • Transfer to a serving bowl. Serve. Share and enjoy!
