Garden of the Gods (Colorado)

Garden of the Gods.
Finally,
If you plan on visiting Colorado..
You will see everyone is talking about it. 
When you get there, it will all makes sense why.

It was breathtaking.


The drive in the busy Colorado Spring makes it worth it.
Seeing this view. 

The Trails, the breathtaking view, it was all worth it.


We didn't go all the way at the end of the trail.
But we did walk a little bit. 



One of the best thing about this Park 
is that the Visitors center is all you need to go
If you want to make it as a quick trip.





The visitors center has things to see, fun for the kids too!


And there's a Balcony where you will see the beautiful mountain view. 
It is very unique and its definitely something to see.






We had such a great time!

Lily Lake (Colorado)

 

There is nothing better than the great outdoors!

And Colorado has the best Outdoor and with amazing views.

So grateful we got to visit again.




We went to to the Rocky Mountains

When we visited the first time, its a bit of a driving and I guess now you have to get some
reservations to go. 
So we didn't get to go again.
That's okay.

We went to Lily Lake instead, we haven't been there so its a perfect spot!



It was gorgeous!



It was still HOT that day.
Summer was on full swing but its okay.
The walk/hike was very doable
even with a Stroller.





Look at these gorgeous views!



The Boys loved it!






It was a Gorgeous family day.

Georgia Boys BBQ (Greeley, Colorado)


We spent a couple of nights in Colorado.

It was such a great time!

On our last night after going to the Rocky Mountain park.

We went out to eat.

Something easy and nice.

It was a long weekend so its a busy one,

So we decided to just head back to Greeley and have dinner there.

 


We went to Georgia Boys BBQ


It has a really nice and friendly atmosphere.
Especially us coming in as a big group.

We had Pickle fries, Pork Belly and Onion straw basket for Appetizer!
This Pork Belly was so amazing!!


For my main dish.
I had their Barnyard Plate.
It pretty much has a little bit of everything to it.
..And I enjoyed it so much!

I definitely recommend.



It was a great night with Family!

Roadtrip to Colorado.


What a great way to end last days of Summer!

Roadtrip!

We have been planning this for a while but with life happening,

It got postponed.

I'm so glad and grateful we finally got to do it!


Hubby's Brother lives in Colorado,

It's a great excuse to visit! :)

 


Anyways,
with 12 hours of drive I had to take Snacks seriously,
I made the good ones and. plenty of favorites.
We didn't plan on stopping a lot so having it already is great!




I made a meat and veggie box.
It's kind of a charcuterie ones, It is so fun to eat!
We also had a veggie dip.


We stopped for Coffee!
Lots of it haha


I also had a kitkat pumpkin flavor and it was so good!






I made Corned Beef Empanadas the day before and it was amazing!




It was a great trip!
Of course, I definitely enjoyed all of the Snacking!

Laing with Pork and Shrimp



There is still a lot of times that I miss Filipino food the most!
This week was Laing.
For me, using pork to cook it with it adds more flavor.
This time I added Shrimp too!

...And it was so good as ever.





I didn't change anything with the Ingredients!
Just added shrimp.
It was sooo good!!!

Melon sa Malamig (Cantaloupe Juice)


With how hot it is these days.
There's nothing better than a refreshing drink!

I had to make this so the boys can try it!
I remember drinking this a lot when I was a kid for meryenda or with Lunch.
So so good.


My first born made a new name for this drink.
He calls it Spaghetti juice. 
I'm so glad they liked it!





Ingredients

  • 1/2 cup  granulated sugar
  • 1/2 cup water plus more for pitcher
  • 1 medium cantaloupe

Optional:

  • Splash of vanilla extract
  • Sweetened condensed or evaporated milk
  • Ice 

Instructions

  • In a small saucepan, combine sugar and water over high heat. Once the water comes to a boil, reduce heat to low. 
  • Simmer, stirring often, until sugar is dissolved. Remove from heat and let cool.
  • Clean the outside of the cantaloupe and cut in half. 
  • Use a spoon to remove the seeds and a melon scraper to scoop out threads of the cantaloupe into a medium bowl. If a melon scraper is not available, slice the cantaloupe and grate the flesh into the bowl.
  • Place the grated cantaloupe flesh into the pitcher and add the cooled syrup. 
  • Fill with water. If using, add a splash of vanilla extract or some condensed/evaporated milk.
  • Serve chilled or with crushed ice.


So refreshing!

Ube Cheese Pandesal


Ohhh Pandesal
The house smells amazing while Baking these.
Nothing else is better.



I remember back then
 going to a Panaderia and smelling the amazing Baked goodies and buying 
some of these was my favorite part of my day.

I feel fortunate to be able to make these myself.
I'm so glad the boys love it
As much as I do.

Pecan Pie Bars

 

Have I mentioned how much I love anything Pecan?
Pecan Pie, Pecan cookies.
Anything!

I can't believe how easy is this to make!
I definitely ate it all myself!
haha!

Very good for Snack, a little breakfast with your coffee.
Or how ever you prefer!




Ingredients:

  • 1 (8-oz) can refrigerated crescent rolls
  • ¾ cup chopped pecans
  • ½ cup sugar
  • ½ cup light corn syrup
  • 2 Tbsp butter, melted
  • 1 tsp vanilla
  • 1 egg, beaten

Instructions:

  • Preheat oven to 350°F. Lightly spray a 9x13-inch baking dish with cooking spray.
  • Unroll dough and press in bottom and 1/2 inch up sides of a 9x13-inch pan. Firmly press perforations to seal. Bake 8 minutes.
  • Meanwhile, in medium bowl, mix remaining ingredients. Pour filling over partially baked crust.
  • Bake 18 to 22 minutes longer or until golden brown.
  • Cool completely, about 1 hour, and cut into bars.




So so good!
