Lots of Baking kind of week.


This past few weeks has been the busiest I've ever been
It's a good thing, I like to do more things outside of the house when I'm alone.

It was finally a good weather the whole week last week.


I started Monday with this delicious smoothie.
Food aversion is really starting and I didn't like this Smoothie as much I did before.
But, I know its temporary and I'm not going to stop drinking it.
This is the perfect time to have more smoothies!

Later that day, I decided to make some Homemade rolls.
I was craving for some soft, fluffy, hot rolls! :)

For dinner, I had this awesome Salad.
Sometimes the meal that is not picture perfect is the best.
I'm back on the salad kick these days.
I need more ideas for Salads.





 The next day, I came over to my friend's house 
to help her with her Cupcake orders.
I was so scared to mess it up.
But I'm proud to say that I'm part of making these.
It's going to be on the top of Cupcake that she's making.
We had to make these first before the cupcakes.


It was fun!
Learned a lot that day. :)


Friday, We went to get costume for the Halloween party we went to Saturday!
It was so hard to pick, But after an hour or so I made my decision to be a 
Roman goddess! Will post it soon!

After looking for costume we stopped by at the restaurant close the store we 
went to, It was Friday.. So, why not! I had a cheeseburger. 
So good! One of my favorite Burger joint!


After dinner, I finally got to try this!
I couldn't stop laughing.
If you had this, You know what I'm talking about.
We did the challenge where both of us take a candy with the same color.
One will get the good flavor and other not so lucky one will get the nasty flavor.
The worst flavor I've got is the Baby wipes! ewww!
But it was really fun! Good thing I didn't get the Booger or Poop flavor. haha!




Later that night, We finished the Cupcake orders she had.
It needed to be ready for the next day.

Eventful fun week!



This week has been the busiest ever! 
There's so many things that happened, I still can't believe its happening.
I wish i can share it to you guys what it is.
But for now, I want to share how my week went.



After having an appointment Monday.
Me and my friend stopped by at the store to pick up something,
I'm still deciding what my little man is going to be for halloween
Last year was horrible, He won't wear anything on his face so I had to try and see if he 
would let me put something on his face, Which he actually like this time.
Maybe I can get him something with face mask this year? (fingers cross)





After that we went to Starbucks to meet up with her friends.
It's so nice to meet new people.
I had some Caramel Mocha latte, the decaf ones.
It was my first time having decaf coffee, And its actually not too bad!




Little man had some new friends too. :)




The next day, I was so lazy that my food is not even picture worth it.
But my breakfast was delicious. 
I need to eat more like this!




 Friday, I had another appt.
After that my friend is doing a scavenger hunt so I went to join them.
I took pictures of them at the graveyard.
It's for the halloween party!



Later that night, We decided to have  a movie night.
We watched Insidious 3..
That movie is creepy!

Anyways, She made Homemade pizza and had some of this awesome dessert.
It was so good!
Her pizza was so good, I had to make sure I will remember what kind of crust she use.
I try to make homemade but ready mix ones are definitely easier.



I stayed home Saturday since it was raining all day.
I hope its not going to rain for a while, Because I'm really getting tired of it.

I made Baked sweet and sour chicken for dinner.
I haven't made this for a while! ( Recipe Here )


I found a new favorite flavor of sparkling water!
Oh, So I read more about the ingredient of this it says it has 3% juice and I thought
that is still not so bad as long as the other ingredients are all naturals.

They said to be careful when picking sparkling waters,
Make sure that the ingredients they use are good.
(Yes, I'm really addicted to sparkling waters) haha!





For tonight's dinner, I made this Filipino dish called Pancit, One of my favorite!
Since I'm eating by myself well, (not totally by myself)
I decided to make what I want.
...And I always pick asian food if I'm alone.


Now, I'm ready to snuggle with my baby and watch 
my Sunday t.v. shows.

I didn't get a chance this week..
But I will share Recipes soon!

Dreams do come true...



For the last couple of months.. Or let say for a while now.
Every time I look at the clock anywhere, This is the time I always see.
I don't wait for it. It just always happens that every time I look, It's the same time.
I find it weird so if I remember it, I would take a snapchat every time I see it.

They said, If you see this.
Make a wish.

I did. I always make a wish.

But.. It's also true that Wishes or Dreams don't work unless you do.

When you do them both, it will definitely happen..

I'm beyond grateful for everything.

My dream has came true and its just the beginning.
Life can make you want to give up or walk away; 
Sometimes it gives you the strength to appreciate when you get your 
wish.

So don't give up.
You are almost there.

Ginisang Munggo with Chicharon.



Rainy days reminds of days back home where Mama loves to cook anything Soupy.
and anything that is made with vegetables. 
She made me love vegetable.


There's so many Filipino Vegetable dishes I wish I could make anytime I want.
It's just so hard to find the ingredient sometimes.
So when I get a chance to buy them I make sure I make them right away and don't pass the opportunity.




Mung beans or we call it munggo in the Philippines is mainly cultivated in India and Southeast Asia.
It's also cultivated in hot, dry regions in Southern Europe and Southern America.
It is used as an ingredient in Savory or sweet dishes.
I love it in sweet dishes too!


..And this one is called "Malunggay" or scientifically known as Moringa.
It's a popular backyard plant in the Philippines.
It is once known as a poor man's vegetable but is not garnering international attention as a 
"Superfood" because of its proven nutritional value and uses.
Living here in the U.S I get so excited when I see vegetables like this that is so rare to find.
The owner of the Filipino store grow this herself in her backyard so It was a perfect timing that when I went to grab some few things at her store, She have this. 
So I had to grab some. :)
Ingredients:

  • 1 Cup dried munggo (Mung beans) washed and drained
  • 1 Tbsp. Vegetable oil
  • Salt
  • 7 Cups water
  • 1 Tbsp. medium onion, peeled and minced
  • 3 Cloves garlic, peeled and minced
  • 1 Large Tomato, chopped
  • 1 Bunch of fresh Malunggay or Spinach
  • 2 Cups Chicharon (Pork Skins)
  • 1 Tbsp Fish Sauce
  • Salt and pepper to taste.

Directions:
  • In a pot over medium heat, combine mung beans, water and 2 Tsp of salt.
  • Bring to a boil, skimming off froth that accumulates and any beans that float on top. Lower heat, cover and cook for about  1 hour or until beans are softened and skins have burst.
  • In another pot over medium heat. heat oil. Add onions and garlic cook until tender.
  • Add tomatoes and cook, mashing with the back of a spoon for about 3-5 minutes or until softened.
  • Add fish sauce and continue to cook for about 1-2 minutes.
  • Add cooked mung bean including liquid. Bring to a boil. Add Chicharon and continue to cook for about 3-5 minutes,
  • Season with salt and pepper to taste.
  • Add Malunggay or Spinach, Turn off heat and cover pot for about 2 minutes or until its cooked.

Serve with Rice.

Weekend Things: A lot of Food!




 We had a busy weekend, A really eventful weekend.
I'm still in shock, Excited, Happy and Grateful.

This week is going to be a big week, So many things need to do.
Hopefully we will get to do it in time.

Anyways, This weekend has been great.
The weather still sucks. 
But looks like its about to get better soon, and that's what is Important.

Saturday we decided to have lunch at our favorite Mongolian Restaurant.
You probably saw one of my posts about this restaurant.
We only go twice a year. 
It's not the healthiest place, But it's really good!


 They have really good salad and fruit selection so I just decided to put everything I think is good.
It was okay :)

...And of course, This!
aahh its so good. Yup I couldn't finish it!
I had to leave some room..


 For this...

Mint chocolate chip Ice cream..
My hubby doesn't like it!
I have such weird taste. haha!


Then Sunday, We decided to have american food.
Well, I made Filipino Style Spaghetti. 
Hubby asked me to make American style but... No, 
I'm sticking to my favorite.  


I made homemade Cheese sticks. 
It was so easy to make.
I just got a Pre-made Pizza Crust.
Preheat the oven to 425
Brush some melted butter on top of the crust.
Sprinkle some cheese on top. (Any grated cheese you prefer)
Then bake it for 10 minutes.



Let it cool off then cut with pizza cutter.
I love it! So easy.






Oh... Hubby found this amazing beer,
It's one of the best beer I've had!
Sucks, I can't have some right now.. haha!

So... I had non-alcoholic Rootbeer with dinner instead. haha! 



I'm ready for a nerve wracking, crazy, busy day tomorrow.. Wish me luck!!!

StayCation




Hubby had a week off from work, It was a rainy week.
Like.. a lot of rain!
We didn't plan anything so we just decided to stay home and relax, catch up on our tv shows
And him doing what he loves to do... play games. haha!



Monday, I decided to make a Crockpot meal.
I usually don't like to spend all day in the kitchen cooking on Monday's.
This was so good.. I highly recommend it! ( Cream Cheese Chicken Chili)



I'm still trying different brands of Sparkling water I love love Sparkling Ice brand 
and It's making me want to just stick to it.
But I decided to try this one.
I only got to find it in Harris Teeter. 
It was okay.. It was unsweet. 
I don't think I'll get use to drinking something unsweet! It sucks! I love sugar!
So i always have to find healthy options to get my sugar.
This was the other brands I tried. ( Sparkling water obsession )
I don't know why I'm so obsessed! Just try it once maybe you will love it too! :)





Tuesday, I decided to make homemade bread.
This bread is good with everything.
Hubby loves it when I make grilled cheese with it,
And I love it with French toast!
Little man loves to snack on it plain, So this bread doesn't last that long.

..And then Thursday we had an amazing breakfast together.
This Nutella stuffed pancakes (  Nutella Stuffed Pancakes ) was definitely one of the best Pancakes I made.


This week has been great.

Nutella Stuffed Pancakes




I can't remember the last time I made Pancakes, We used to have it every Friday.
But I think the whole Summer I never had any Pancakes. 
But last night I craved for it, Maybe its a fall/winter kind of food for me?
 so I decided to make it.
Me and my Husband have a really different taste with food.
I like fruity pancakes, 
and him.. He loves anything with meat.
So since I haven't made this I decided to make something different for both of us.
I made this for me and I made him the Sausage Pancakes I made him before. (Sausage Pancakes )
We love having Scrambled eggs with Spam too so I made that too.
It was an amazing Breakfast!

Nutella Stuffed Pancakes 


Ingredients:
  • 2 Cups all purpose flour
  • 2 Tbsp. Baking powder
  • 1 Tsp. Salt
  • 3 Tbsp. Sugar
  • 1 3/4 Cup Milk
  • 2 Eggs beate
  • 4 Tbsp. Unsalted butter, melted
  • 1/2 Tsp. Vanilla extract
  • Nutella (make sure that it is soft and creamy)
  • Strawberries or Bananas for toppings

Directions:
  • In a medium size bowl, whisk together flour, baking powder, salt and sugar. Set aside.
  • In a large bowl, mix together butter, beaten eggs, and vanilla.
  • Gradually add the flour the liquid mixture. Stir gently with a whisk (Don't over mix)
  • Let the batter rest for 10 minutes.
  • Heat a griddle on medium high heat.
  • When griddle is ready add 1/4 Cup of batter onto the griddle.
  • After a minute or so add 1/2 to 1 Tbsp. of Nutella to the center of the pancakes.
  • Use a knife to gently spread Nutella out a little.
  • Cover the butter with about 2 Tbsp. of batter or enough to cover up the Nutella.
  • When bubbles for on the top of the pancake and underside is golden, Gently flip it over and cook the other side.
  • Place on a plate and make the rest of the pancakes.
  • Serve warm topped with fresh strawberries or bananas.




Cream Cheese Chicken Chili



I didn't need to do meal prepping last Sunday.
Its good to have something different.
Something fresh for dinner. Reheating food all the time gets a little boring
That's why this couple of weeks I've been cooking new meals every 2 days.

It's been rainy these days, I don't even remember the last time I've seen the sun.
Cloudy, gloomy days makes me so sad..
I can't wait for the weather to get better.

When I woke up Monday, I decided to make something creamy and soupy.
Since its Fall all I can think about is make Chili, or anything Pumpkin.
I want to make a pumpkin dessert soon, But first I decided to make this.
It was definitely a keeper.
I highly recommend this Recipe!


It's one of the easiest Crockpot Recipe I've ever made. 
There's no way you will mess it up!
Just make sure you are patient enough to keep the Crockpot close! :)

Cream Cheese Chicken Chili
( Crockpot )


Ingredients:
  • 4 Chicken breasts
  • 1 Can Rotel tomatoes
  • 1 Can Corn kernels, do not drain
  • 1 Can Black Beans, Drained and rinsed
  • 1 Package, Ranch dressing mix
  • 1 Tsp Cumin
  • 1 Tsp Chili powder
  • 1 Tsp Onion powder
  • 1 8 oz Cream cheese

Directions:
  • Put the chicken in the crock pot 
  • Top with tomatoes,corn, the drained beans.
  • Add the Ranch dressing, cumin,onion powder and chili powder
  • Stir to combine then top with the cream cheese.
  • Cook on low for 6-8 hours, stirring once or twice to blend in the cheese.
  • Shred the chicken into large pieces and serve over rice.

Can also serve in tortillas or taco shells
or as a dip.
