Chicken Adobo





I rarely cook Filipino food, because I want to learn and try dishes I never had.
But on days like this making an Authentic Filipino dish couldn't be more perfect.

Chicken Adobo is the simpliest authentic filipino dish, some people make this differently 
so today I want to share with you guys one of my favorite way to make it.

This can also be cooked with pork, But it gets to be a little greasy and I don't want that right now so 
I decided to make it with chicken.

Chicken Adobo
Ingredients:
  • 2 lbs chicken, cut into serving pieces
  • 4 tbsp. soy sauce
  • 1-2 potatoes, cut into cubes
  • 3 pieces dried bay leaves
  • 2 tbsp. vinegar
  • 3 cloves garlic,minced
  • 1 to 2 cups water
  • 1/4 cup cooking oil
  • 1/2 tbsp. white sugar
  • salt and whole peppercorn
  • 4 Hard boiled egg


Directions:
  • In a large container combine soy sauce and garlic then marinade the chicken for at least 1 to 3 hours
  • Place the cooking oil in a pan, put in the marinated chicken. cook all sides for 5 minutes.
  • Pour in the remaining marinade and add water. Bring to a boil
  • Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until chicken is tender.
  • Add the Potatoes and cook for another 10 minutes.
  • Add vinegar stir and cook for 5 minutes.
  • Put in sugar,salt and the hard boiled eggs, Stir and turn the heat off.
  • Serve with rice.
