Maple Dijon Pork Tenderloin





I'm starting to get these weird cravings,
That I want different kind of food everyday.. 
I don't know if that's bad but last Friday I just went with it and made something 
I'm craving.
Hubby loves meat so he liked the idea too.
The flavor of this dish is phenomenal.
Hubby said he was surprise that I made something like this. 
It's going to be on my favorite recipes list.

It's a little tricky with cooking the meat, because the thicker the tenderloin you get
the more you have to cook it, So i suggest to cut it in slices 30 minutes of cooking it, Just put it back in the
oven to cook it more. It turned out really good!

Maple Dijon Pork Tenderloin

Ingredients:

  • 2-3 lbs  Pork tenderloin
  • 1  Large sweet potatoes, thinly sliced
  • 2 large red apples, cored and thinly sliced
  • 8 slices uncooked bacon, chopped
  • 6 tbsp. butter
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup dijon mustard
  • dried sage or fresh ones
Directions:
  • Preheat oven to 450 degrees
  • Prepare 8x11 pan and spray with some cooking spray
  • Layer sliced apples and sweet potatoes in overlapping rows to completely cover the bottom of the pan.
  • Top with bacon and sage leaves. 
  • In a small saucepan, heat 2 tbsp. of butter, 1/4 cup brown sugar and 1/4 cup of maple syrup until melted. Drizzle over sweet potatoes,apples and bacon.
  • Place tenderloins on top; season with salt and pepper.
  • In a small saucepan, heat 4 tbsp of butter, 1/4 cup maple syrup, 1/4 dijon mustard and 2 tbsp of sage until melted. Drizzle over tenderloin.
  • Bake  uncovered 40-45 minutes or until internal temperature is 160 degrees. (If your tenderloin is thick cutting it would be a good idea and putting it back in the oven, that's what i did)
