Jalapeno Cheddar Egg Bites


During the week we eat more snacks than anything. 
During busy days having small snack/meal is just the best thing.
So I love having something ready to be heat up or just ready to eat whenever.
...And eggs is the best cooked ahead of time. 

We have been in Jalapeno anything mood so why not add it to an Egg too.
This was the easiest snack/meal prep however you want to call it I ever made.

Jalapeno Cheddar Egg Bites

Ingredients
  • 6 large eggs
  • 6 egg whites
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 jalapeno peppers, divided
  • ½ cup shredded sharp cheddar
  • 4 slices bacon, cooked and crumbled


Instructions
  1. Preheat oven to 350
  2. In a large mixing bowl whisk together eggs, granulated garlic, onion powder, salt, and pepper.
  3. Take 2 of the jalapeno peppers and slice in half and remove the membranes and seeds. Diced the jalapenos into small pieces.
  4. Stir diced jalapeno's, shredded cheddar, and crumbled bacon into the eggs.
  5. Slice the 3rd jalapeno into 12 slices, remove the seeds.
  6. Divide the egg mixture into a 12-cup muffin pan sprayed with cooking spray.
  7. Slice the 3rd jalapeno and place in the center of each egg bite.
  8. Bake for 20 -22 minutes or until the eggs are set.
  9. Remove from pan and serve.
