Spinach Pancakes




Good morning everyone!
I know you're thinking that you might not like how these taste, But I swear you are going to love it. You can't even taste the spinach, I made this twice already and my little one love it so much.
Its the best way to sneak in vegetable to your meal!


Ingredients:
  • 1 and /2 Cup baby spinach
  • 1 Cup milk
  • 1 Cup whole wheat flour
  • 1 Large egg
  • 1 tbsp. Sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt


Directions:
  • In a blender, combine spinach, milk, and egg and blend until smooth.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt and sugar
  • Whisk the wet ingredients into the dry ingredients until just combined.
  • Heat a large pan or griddle over medium heat and grease with butter or oil
  • Pour about 1 Tbsp. of the pancake mixture onto the griddle. making as many pancakes as till fit and cook for 2 minutes
  • Flip the pancakes and cook for one minute longer and serve.

Enjoy! :)


Serve with some pecans on top, sliced bananas or any  fruit of your choice.
