Beef Stew
This is one of my favorite Filipino food.. Every time I miss motherland (Philippines) I like to eat or make Filipino food to take away my homesickness, it does help sometimes but I wish it's my mom making it.. she's the best in cooking, I know all of us can say that about our moms, they're the best! :)
This beef stew recipe is comforting it's perfect for fall/winter season it's really simple but the flavors of it is so good.
Ingredients:
(adapted from: Panlasang pinoy)
- 2lbs Beef, cubed
- 3 medium carrots
- 1 1/2 cups chopped celery
- 3 medium potatoes
- 1 1/2 teaspoons paprika
- 1/4 teaspoon ground cloves
- 2 pieces bay leaves, dried or fresh
- 1 tbsp. cornstarch diluted in 2 tbsp. of water
- 1 tsp minced garlic
- 1 medium onion, chopped
- 2 cups beef broth
- 1 1/2 tsp ground black pepper
- 2 tbsp. cooking oil
Directions
- Heat oil in a pot.
- Sear the beef, add onion, garlic, bay leaves, ground cloves, and paprika, Stir and cook for 2 minutes
- Pour in beef broth and let boil. Simmer until beef becomes tender.(This can take more than hour)
- Add celery, carrots, potatoes, salt, and pepper. Stir and cook for 6-10 minutes
- Pour in diluted cornstarch. Stir and cook more.
- Turn off heat and transfer to a serving bowl. or serve over rice (perfect way to serve it) :)
